So after Friday I went to the chiro and had him adjust me again. My neck seemed to be a little better but I went straight to sleep around 5:00. My husband really wanted pizza and faked ordered it. He faked ordered it by saying, " I ordered pizza caboose..." I laughed and said "ok I guess" In which he responded, "yes you didn't say no, so that means I can order it!"
As they always say its easier to get forgiveness than to get permission.
I asked him to wake me up when the pizza came because I love hot pizza. I remember hitting the pillow and then darkness. The next thing I remember is my dog barking and my husband shaking me gently saying, "the hot pizza is here." In which I responded,"No, I want to sleep"
I didn't wake up until 9:00. I nu waved my pizza and wedges and I scarfed it down. With my neck the way it was feeling and my head feeling like it was full of cotton I just wanted to sleep again. I went back to sleep and did not wake up until Saturday 10AM. Everything hurt. My neck was worse and I was dizzy. I asked my husband to please go get my prescriptions and he woke up and went. He brought me back a muscle relaxer and oxy. I took the muscle relaxer and 1/2 a pill of oxy. I felt a lot better but I ended up going back to sleep until around 2:00. I can't remember much of Saturday I just know I ate some top ramen and went back to sleep. At this point my neck didn't hurt buy my dizziness and this spot above my eyebrow hurt every time I took a breath.
Sunday hit quickly and I woke up groggy. I put myself in the shower and went to church. We left halfway through because of the spot above my eyebrow. It hurt so much. I slept through most of football, which if you knew me, is a big deal.
My neck has improved a little bit, and the worse part is the lightheadedness and dizziness. It kinda felt like my head could float away at anytime. I'm hoping this is just a side effect of my neck and it goes away.
Today I am still feeling like my head could float away and my mouth is very dry. I had a fruit smoothie this morning with organic almond milk and for lunch I had 7 grain sandwich with lunch meats. I only ate half. Thus far I am doing kinda paleo but more just clean eating while watching my portions sizes. I can't think straight yet with my head the way it is and standing for too long makes me want to fall over. Hopefully this passes and I can get back to normal. Right now all I can hope for is making healthy choices. Portion sizes are the most important thing for me I believe.

Day 8: Urgent care stays and dizzyness.
So even though was are doing 80/20 its still hard for me to incorporate breads/grains/starches. I find myself trying to avoid them and I find myself a little disgusted by how much bread and grains is in all our food. I find that they are easy to avoid though because most places have other options.
I get surprised that places like jamba juice have breads for sell. The other night when I was eating jack in the box I couldn't really finish it because of the breading on the spicy chicken and because of all the bread.
I do think that potatoes are probably the best things ever. I think no matter what I will always love potatoes in any kind of form. Mashed, fried, soup, baked, fried, shredded, in ball form, in pancake form or grilled. Oh my gosh they are so good. But the bread I am beginning to think I can do without. I would love to open a restaurant called Pauline's potato CO. And its just potatoes in every form with other things as side dishes.
The past few days I've been dizzy and I hurt my neck so last night I did not eat paleo because from Urgent care we were sent to the ER. Everything is fine, but they were worried about meningitis. While in the hospital my husband says, " I think we need to stop the Paleo thing." I know he is worried about my health but I really believe the dizzyness and Paleo are to separate things. I ordered a mango smoothie this morning while getting donuts for my coworkers and I took a sip. UGH the sugar! UGH!I just couldn't drink it.
Lunch today will be a salad and then grocery run for paleo things.
I will post the foods I get and the prices.

Day 7: last night dinner, today breakfast and lunch.
So some how I hurt my neck. I still managed to get all my steps in but man I couldn't move. That being said when I got home from work I just wanted to lay down and relax. I didn't want to cook and in all honesty it was time for just a normal meal. I looked at my husband and said, "pizza or jack in the box?" In which he replied, "really?"
We discussed it for a while and landed on Jack in the Box because a pizza is like 12 inches of bread and not even thin bread (our pizza place uses thick crust). Plus its so good we just wouldn't be able to stop.
we drove out to Jack in the box and order somewhat sensible. Trying not to go over board.
I inhaled my bag just like the commercial and we commenced our eating. In all honesty it wasn't good but it wasn't bad. The bacon was terrible and by the end of my sandwhich (chiptole chicken club) I was peeling the bread off and just eating the chicken.
Curly fries are always good. I swear if I had a last meal it would be fried chicken and curly fries. Oh and risotto! and snickers! now I'm just dreaming about my favorite foods.
The aftermath wasn't very good on my part. My husband finally went poop so thats weird, but my stomach is very upset.
I woke up in the middle of the night with it hurting.
This morning I had nothing to cook (eggs smashed yesterday) so I ran to jumba juice and got a fruit and veggies juice. It is all juice and nothing else. I can see them juicing everything. I'm hoping that will help. Its spinach, kale, carrot, apple and ginger.
LUNCH: today it is left overs from the other night, chicken with the squash ribbons. Back at it again.

week 1 done!:breakfast and lunch...thoughts
So I woke up super dizzy today. I couldn't focus my eyes last night and it was hard to focus this morning. I don't like this effect and I feel like this is due to not eating enough food.
I weighed myself. I lost 6.5 pounds. Though I am excited about this weight loss I don't feel like it is healthy. I feel like the weight loss could be due to not eating enough.
I did lose inches though
Waist: lost 1/2 inch
arms: lost 1 inch each
Legs: lost 2 inches
Hips: Lost 2 inches
Bust: lost no inches
My husband lost 8 pounds.
So for breakfast I cooked up some asparagus and eggs, with some sausage. I was putting the eggs away and dropped them. (I really believe coordination is a side effect of paleo). All the eggs broke. I cooked them up anyway for the dog.
The more I research Paleo the more I am worried that after the 30 months we will be gaining all the weight back. I do think that the idea of cutting out processed food, refined sugar and excess sodium is a great thing. I think this can be done even if you do eat grains and beans.
This whole experience is great for learning to eat at home. And it has great new ideas for incorprating more veggies and fruit. As well as cooking with different oils.
Up to this point I have lots of questions as far as the oils we are allowed to eat. Olive oil? Really? I don't think they had that back then in all honesty. I think there are a few things that are just added for the sake of healthy. I think its great to have clean eating and I think its great to restart your body but really some of the stuff is super unbelievable.
In order for the call for moderation and for the sake of my body and well being I will slowly just add in starches and whole grains non processed. I will be reading labels very carefully as well as being more vigilant in eating my veggies. To this point I feel like it should be 80/20 as far as meats/veggies to grains and starches.
I also refuse to call this cheating. I have no loyalty to food. I am not cheating on food and I am not hurting myself or someone else. Calling it cheating is saying its bad and makes one feel guilty. Food shouldn't be good or bad and there shouldn't be a connection of emotional things with food. This is whee we can turn food into emotional things.
This is just want I feel I should do for the sake of my health. I call for moderation. I will let you all know what I will be adding. It won't be alot and it will be more like Primal eating. 80/20

day 6 dinner: chicken with asparagus
So today was tough, not in the meltdown kind of way, but the I had a kid that was difficult and sapped all my energy kind of way.
I didnt snack and I ate my lunch and orange. Thats it. I drank lots of water and some kombucha. it's weird to drink at school because it almost has an alcohol kind of taste. Thats only because its fermented.
I came home super tired and simple things like opening doors was difficult.
I searched for a long time for restaurants I could eat at because I honestly am way too tired to cook, but couldn't find anything.
Dinner was easy though, chicken breast with onions and asparagus. I started eating and almost stopped halfway. It seemed like a lot of food. I know I have to eat or else I'm borderlining super unhealthy.
My husband seems to be doing fine though which is a surprise due to him being biggee than me. Still nothing in the bathroom department.
I was also planning on doing hip hop abs tonight but with my energy level so low I think it's best to pass.

So yesterday evening after watching TV, I had a melt down.
This jack in the box commercial came on TV with a girl inhaling a bag of jack in the box and I swear I could smell the food through the TV. And then they showed the fries. Golden fries with a spicy chicken burger and bacon. I almost run out the door.
Luckily when I asked my husband he said no.
Then said, "don't ask me again."
In which my response was to pick up my dog and and pretend to have him stop me. I muzzled my face into his belly and I yelled, "STOP ME, I'm gonna eat you!" At this time he got up and run off the couch and gave me a look of, "she has completely lost it."
Then I proceeded to wrap the blanket around my head and just wail in misery.
I was so miserable....
It passed, of course, and then I turned on Diners, drive-ins and Dives...That was a huge mistake! The show was making pizzas...really good pizza. I almost started licking the TV. I changed the channel and my husband asked, "wanna go to jack in the box?" I said, "NO AND DON'T ASK ME AGAIN!"
Tomorrow is weigh and measure day. It'll be good to see if this diet is even worth anything.
This morning I woke up and scrambled some egg, left over zucchini, which the book yesterday wanted me to throw away, ground beef and aspargus. I added a side of avocado.
Very good.

day 5: dinner, grilled chicken with buttered squash ribbons
So today at work I had 35 almonds. And now I'm freaking out that I consumed too many! I know too many can make this diet not work.
I needed some kind of snack at work and I left my orange at home. :(
I definitely had low energy today, but thankfully my kids were all happy today.
Tonights dinner was chicken breast with lemon, rosemary, and thyme. In the midst of all this I have a feeling my meat thermometer is broken. I use it for chicken to make sure its perfect and it won't climb past 145....lousy good for nothing.
The squash ribbons was yellow squash and zucchini peeled in ribbons. Cooked in grass fed butter and salt and pepper.
I added onions because I didn't think it was enough veggies. The food was simple and tasty.
Though because of the workday I naturally want to grab some lays. Its my go to after school snack. I think I could make some...maybe....nope!

Today I start working again. I work as a special education teacher and I have big worries about my energy level at work.
Thus far my husband and I aren't really eating snacks. Its basically been 3 meals a day. We have had maybe had 1 almond cookie for dessert but that's been a total of 2.
Due to my job I usually need lots of energy and I usually need to be able to react very fast. I feel like I am still getting used to this diet and I am getting the symptoms of a cold. I have a sore throat and very bad brain fog. So fingers crossed that I don't fall off the wagon. Also I am eating a lot earlier and my lunch isn't until 12. that's about 5 hours without any food. Seems impossible considering how much I snacked throughout the day.
This morning I had leftover egg custard. Tasted great. Usually microwaved left over eggs tasted really bad in my opinion but this was still very tasty.
For lunch I have the steak flank salad. Problem with this lunch is the fact that the lettuce is very soggy. Lesson learned.
Hopefully I can do this. Drawing strength from the Lord today.

day 4: lunch and dinner. bugerville and winter savory chops with bacon tomato casserole
So today due to me not feel very well, I did make lunch. Instead we went to burgerville to try our hand at ordering paleo.
Burgerville has only natural grass fed meats. All from oregon.
We got there and ordered a pepper bacon burger without bun. My husband remembered the cheese and we took that off the burger. With that the server asked if we wanted mayo. Oh whoops no!
We got our order and ate. Felt like enough food and we ate slowly. One thing I've noticed on paleo is eating slower. I'm not sure if because lettuce takes longer to chew but we sure don't eat as fast.
Dinner was very tasty. It was garlic, pepper and salt rubbed into pork chops. The veggies was tomatoes with onion sauteed in bacon. Then layer the tomatoes and bacon/onion combine on top of each other. This casserole took a long time to cook but wow the flavors were so good. My husband usually doesn't enjoy onions but he LOVED this dish. It honestly wasn't a lot of food but it was filling.
Burgerville has only natural grass fed meats. All from oregon.
We got there and ordered a pepper bacon burger without bun. My husband remembered the cheese and we took that off the burger. With that the server asked if we wanted mayo. Oh whoops no!

day 4. left over spaghetti squash with eggs and sausage.
This morning I went number two. Finally. It was super green. Weird. I didnt cook from the book this morning because one the left overs are piling up and two I don't have liver. I was suppose to make pork sausage patties with liver...not going to do it. Sorry. Ive had liver. Taste like chalk. And don't even get my started on the texture.
So instead I used the leftover spaghetti squash whipped it with lite coconut milk with eggs and chopped sausage. Sliced up some avocado and it was so yummy. Didn't eat very much felt fulk early on. So I saved it for tomorrow morning.
I start work again tomorrow and while its been nice to have time to cook every meal. I know when I start teaching again I'll need quick and simple go tos. I have been saving a lot of our food for left over lunches. And this book actually has lots of leftovers for lunch or breakfast.
Funny thing though, all morning I felt really weird. Almost anxious. Every few minutes I would have butterflies in my stomach and it would be hard to breathe. Not sure what is going on. Ive also developed about 3 cold sores. Super weird

day 3: lunch dinner, flank steak salad and pesto beef and olives.
So the breakfast was pretty good. Felt pretty good for about 4 hours. Came home and made lunch. Cut up lettuce, red bell peppers and carrots. Grilled a flank steak and let it rest.
Dressing for salad balsamic vinegar, lemon juice, seasme oil and olive oil.
So tasty! Husband said "I can't believe this is diet food!"
We felt good for about another 4 hours.
Made dinner.
Used spaghetti squash for the first time. Very time consuming to make. Made pesto sauce with organic basil, pine nuts, lemon juce, garlic and olive oil.
Combine ground turkey and onions and sauteed.
Forked out the spaghetti squash. It taste really different than I expected. I'm not sure why everyone says it taste just like pasta. Maybe I didn't roast it long enough. Roasted it for 40 minutes.
Combine all ingredients and top with kalamata olives. This is the first dish I did not enjoy. Either I don't like the pesto sauce, or I dont like spaghetti squash. Either way I did not finish my plate. I don't feel hungry though and I just came home and ate an orange.
Complications: paleo has cost us a lot of money. It could be trying to buy everything organic. It could be buying all foods at trader joes. Or it could be all the meat.
So far just this week alone we have spend over 130 dollars. There is only 2 of us. We arent eating out and I have been cooking everything right. Tomorrow we go back to the store and will try a different approach.
First we will go to winco and bring next weeks list. I'll have to try to get more creative. May even look at going to costco. In reality though if we end ip spending more thrn 240 a month for 2 people, I just don't see us keeping up with this book. You made find me tweaking some reciepes. We aren't going to stop paleo but may have to try something different.

Yesterday the almond chocolate chips cookies were actually pretty good. My husband was pleasantly surprised. Its amazing that its only 4 ingredients.
This morning I woke up not as shakey or hungry, but my husband woke up very shakey. He has never been shakey before so that is something new.
The recipe called for ground lamb sauteed in bacon fat (recipe called for duck fat, but i had bacon fat from the day before). Veggies where sliced mushrooms (shitake, but we used button) half an onion, and 1 pound of asapargus.
Seasoning was minced garlic, ginger, red pepper flakes and sea salt.
My husband an I are not mushroom eaters so the button mushrooms are all we can handle.
All this goes in the same pan, whike you sautee a shredded head of cabbage in another pan.
Once everything is cooked we then toss the meat with seasme oil. The cabbage is suppose to mimic noddles.
I thought it was very tasty, although my husband was concerned with the amound of onions. He also thought the meal was bland. But he said it was satisfying.

day 2. lunch and dinner. left over italian soup and halibut salad nicose
So after breakfast we both felt very good. When lunch rolled around I was too busy making a birthday cake to eat. But after talking to my husband we realized we weren't really hungry, we just had the leftover soup and that was it.
Something odd since we started this challenge neither of us has had a bowel movement. That may be too much information, but I plan on using this blog to really talk about what paleo does. We have so much media at our finger tips that its difficult to know what is a honest testimony or false. So don't surprised to read some very honest things.
The dinner was very tasty. I was never a fan of fish with salad, but this recipe was so yummy. It was mixed salad greens, tomatoes, kalamata olives, hard boiled eggs and a homemade dressing. That dressing had spice brown mustard, white balsamic vinegar, olive oil and lemon. So tasty!
I also tried my hand at almond flour chocolate chip cookies. Not sure how to feel about these cookies.
Day 2 finished. Feeling ok. Not hungry or full.

So last night I woke up to go to the bathroom 2 times. My water intake has been a lot higher with this challenge. There aren't many snacks we can eat during this challenge, so I find myself drinking a lot of water.
This morning I woke up very hungry. I got started making our meal and I was a little shaky. This is how I know I am hungry. The recipe was 5 pieces of bacon, 1 cup of mushrooms, cocnut milk and 4 eggs. Serving 2 people. It made a lot of food! My husband was very surprised. He said "I have to eat all of this?!" Yes, you have to eat it. Maybe not all but yes. I sliced up avacoda to go with our meal because its recommended to eat it with at least one meal.
I put the concoction in the oven and hungrily waited. We took a bite. It was delicious! And the avocado was so creamy with the egg. My husband pointed out it was much lighter than expected. I can agree because of the coconut milk.
There was a beautiful taste of sweet and salt with this meal. I can see making this in advance.

Day 1 lunch and dinner. Sausage/italian wedding soup
So we made it to lunch. We shared an apple for a snack and again we both felt fine. The most interesting thing that we both felt was the lacking of craving things. At lunch we had little sauages fruit and turkey burger. No condiments, no buns or anything else. By around 6:00 I was feeling lightheaded and it was hard to get my eyes to focus. I came home and made the italian wedding soup. It consist of ground pork with seasoning, celery and carrot. We used low sodium chicken broth and water. It smelled amazing and tasted very good.
Now its after dinner and I'm not sure how I feel. I don't feel hungry but I still feel lightheaded.
My husband actually feels fine. And he is usually always hungry and craving sweets.
We are committed.
We also found almond flour (for the pancke recipe) and some kale chips.
Day 2 complete.
I don't think we've ever eaten less.
Now its after dinner and I'm not sure how I feel. I don't feel hungry but I still feel lightheaded.

Yestersay December 31st 2014 my husband and I bought all the foods for week 1. It was very pricey. The meat alone cost 55 dollars. Hopefully with time we can learn how much food we need and we can be thrifty. We also chose to buy our food all organic and grass fed from traders joes. I believe that we can find other stores with better prices. I plan on not skipping on grass fed meats. Our total bill was 127. Yikes! But we commited this week to do it all out.
We ate our chosen dinners, kfc for me and jack in the box for my husband. And looked at each other and said "this is it."
This morning we woke up and cooked the first meal from the book. It was tasty and satifying. But 1 hour and 30 minutes later my stomach is a little bit grumbling. I wouldn't say I'm hungry but it is odd that im not automatically reaching for junk. Im not sure what the grumbling means, but I plan on being strict.
My weight today is 150. We also measured. I wear a size 6 tighly and 8 comfortably.
My husband wears a size 34 tightly and wants to go back down to 30.
